I wanted to try a rice substitute and made a kinda rice with a delectable curry flavor.
Ingredients:
- 1/2 cup quinoa (I used white)
- 1 cup water
- 1/4 onion chopped
- 1 tbsp. Olive oil
- 1/2 tsp. Seasoning salt
- 1- 2 tsp. Curry powder
- Some chopped cilantro
Putting it all together
- Place the quinoa in a sieve and rinse well. Read somewhere that it helps reduce some bitterness.
- In a skillet, heat the oil and saute onion for 3-4 minutes.
- Add rinsed and drained quinoa, curry powder, seasoning salt (or regular salt) and water.
- Bring water to a boil, then cook covered on LOW heat until all the moisture has been absorbed.
- Fluff with a fork and serve hot garnished with cilantro.
