Delectable Curried Quinoa

I wanted to try a rice substitute and made a kinda rice with a delectable curry flavor.


Ingredients:

  • 1/2 cup quinoa (I used white)
  • 1 cup water
  • 1/4 onion chopped
  • 1 tbsp. Olive oil
  • 1/2 tsp. Seasoning salt
  • 1- 2 tsp. Curry powder 
  • Some chopped cilantro

Putting it all together
  • Place the quinoa in a sieve and rinse well. Read somewhere that it helps reduce some bitterness.
  • In a skillet, heat the oil and saute onion for 3-4 minutes.
  • Add rinsed and drained quinoa, curry powder, seasoning salt (or regular salt) and water.
  • Bring water to a boil, then cook covered on LOW heat until all the moisture has been absorbed. 
  • Fluff with a fork and serve hot garnished with cilantro.
