With the stay-at-home situation due to COVID19, I have been experimenting with some healthy meal options. This recipe basically removes rice from the meal.
Ingredients:
For 4 persons
2 cups grated cauliflower (I used the frozen packet from Trader Joes)
1 tablespoon ghee
Whole spices a few (cardamom, cinnamon, star anise, jeera, shah jeera, bay-leaf)
1 cup frozen peas and carrots
1 sliced onion
Mint and Cilantro

1 cup frozen peas and carrots
1 sliced onion

Method:
- If using fresh Cauliflower, grate it (2 cups for 4
- If using frozen cauliflower, defrost in microwave for 5-6 minutes; Drain in a sieve to remove excess moisture
- Heat ghee in a pan, add whole spices, saute for a minute
- Add onions and saute until they start to brown
- Add peas and carrots (or other veggies) and a little salt. Saute for about 3 minutes
- Add cauliflower "rice" and mix well. Add more salt if needed.
- Add chopped cilantro and mint. Mix.
- Cover an steam pulao over low heat for 4-5 minute for the flavors to meld.
- Serve hot with Raitha
