Beef Kebabs and Mediterranean Rice

A simple kebab recipe that you can make in your oven or a toaster oven if you d not have a grill.

Ingredients for Kebabs:


Step 1:
1½-2 pounds stew beef or beef steaks cut into 1 inch cubes (kebab size)
2         Tspn. Ground black pepper
1½     Tspn. Ground cumin
1½     Tspn. Garlic powder
1          Tbspn. Worcestershire sauce
2         Tspn. Dried Oregano
1          Tspn. Meat tenderizer
2          Tbspn. Olive Oil
2          Tspn. Lemon juice
            Salt to taste
Method:
·        Place all of the above in a Ziploc bag or glass container. Mix well and refrigerate for 3-4 hours.
·        Prep veggies in Step 2 below.



Step 2:
2          Roma tomato - cut into big dices
1          Green bell pepper - cut into big dices
1          Red or yellow pepper - cut into big dices
1          Zucchini sliced (1/2 inch slices)
1          Red Onion - cut into big dices
½       Tspn. Ground black pepper
1          Tspn. Ground cumin
1          Tspn. Garlic powder
1          Tspn. Dried Oregano
1          Tbspn. Olive Oil
2          Tspn. Lemon juice
Method:
·        Place the above ingredients in a Ziploc bag or glass container. Mix well and refrigerate for 2-3 hours.

Ingredients for Rice:
2          Cups cooked rice (Basmati, long grained or parboiled)
3          Tbspn. Olive oil
     Tbspn. chopped garlic
½       Red onion minced
2          Tablespoons hot sauce (optional)
½       Tspn. dried Basil
½       Tspn. Dried Oregano
1          Teaspoon Cayenne (optional/adjust quantity as needed)
To taste: Lawry’s seasoning or salt or any flavored seasoning
Method:
·        Mix all the above, cover and microwave for 5-6 minutes for the rice to absorb all the flavors
·        Make sure  the Rice is warmed up just before serving

Bringing it all together:
·        Soak 4 skewers (if using wooden) for 30 minutes
·        Preheat oven to 475 F (broil setting will also work)
·        Assemble the Kebabs alternating the meat and vegetables
·        Place kebab skewers on grilling rack or sheet. Apply a little cooking spray
·        Place in oven and cook for 14-15 minutes until the internal temp is 145 F. Cook a little longer if you would like your meat well done
·        Place warm rice on a flat platter
·        Arrange kebab skewers on the rice
·        Drizzle yogurt sauce over the kebabs - (mix together ½ cup plain yogurt, salt, 2 tspn. Olive oil, ½ tspn. Oregano, ½ tspn. Cayenne)
·        Sprinkle a little feta cheese      
·        Serve immediately
