Yummy Onion Chutney
Although this sweet-sour-spicy chutney calls for a little more oil than you would like to use, and takes a few minutes to prepare, it is worth it all to the yumminess YOU DESERVE 😀
Ingredients
- 1-2 cups finley chopped onion or shallots (I use Red onion and chop using a mini food processor)
- 1 finely chopped tomato
- 1-2 tspn. paprika or mild chili powder
- 1 tspn. hot chili powder (optional)
- 1 tspn. sugar
- Salt to taste
- 1 tspn. lemon juice
- 5-6 tblspn. Oil (coconut oil gives the best flavor but you can use other varieties)
- 1 sprig curry leaves
Method
- Heat a non-stick pan
- Heat oil and add curry leaves. Stir for a minute
- Add onion and saute until well browned.
- Add tomatoes, sugar, salt and lemon juice
- Continue cooking for another 8-10 minutes on medium flame until the whole mixture turns deep brown indicating that the onion is well caramelized
- This chutney can be refrigerated for up to a week.
